I have finally finished my work week. I am fast approaching burn-out at work.  I took Saturday off last week for my birthday, but I think I need a combination of self-care methods to really combat this (that and a week off).  Winter is wearing on us all.

I got a blu-ray player for my birthday and have been using it constantly while at home to stream netflix.  Parks and Recreation Season 2 is my new happy place. I love Leslie Knope a lotly.  Aziz Ansari can be my new boyfriend (except I think I have already dated Tom. Twice).

Feeding myself today was kinda stressful.  Adulthood means keeping your own self alive,  but I seem to do better when I focus on feeding other people. I blame being a Girl Raised In the South for some of this and laziness for the rest.

This morning I had a bowl of Kashi cereal and 1/2 a banana with almond milk.  I had a lot to do before work to get ready for a party (at work) and I was in charge of making the oreo cheesecake.  This is when I made an AMAZING discovery: Oreos? Kinda vegan.

Praise Jesus, Glory Halleluah, and Hosannas to the King, I WAS EXCITED!!!

So. Yeah.  I have eaten a fuckton of oreos today.  Well, maybe not a metric fuckton.  Possibly about 6? Less than 10 for sure over the entire day. Not that I didn't want to scarf the entire carton once I had made the cheesecake.  Luckily, I have these cavities that I am afraid to go back to the dentist and get filled and certain sugary foods hurt to eat.  So, I was not able to fall into the abyss of an empty bag due to the pain in my mouth.  Sadly, I still ate at least 6 cookies and possibly as many as 10. 

For lunch I had an Amy's Organic dinner - Matar Tofu.  I thought it was kinda tasty -- the girls were disgusted. I need to bring less strongly scented frozen dinners to work. They had pulled pork and french fries.  I thought about eating the fries but was almost too stressed out at that point to even eat my dinner (normal work stuff). 

Got home and the crockpot stew I had started before work was finished and was pretty tasty.

Barley Vegetable Stew

1 tbs Olive Oil
1 medium yellow onion, chopped
2 medium carrots, thinly sliced (I used 1/2 a bag of baby carrots I thickly chunked)
1 celery rib, sliced (I used 3)
3 garlic cloves, minced
1 lb red-skinned potatoes, cut into 1/2-inch dice (I used about 2 cups of frozen potatoes o'brien because that is what I had)
11/2 cup sliced white mushrooms (didn't have them - it turned out great but really would be better with the mushrooms)
3/4 cup pearl barley
1 (14.5oz) can diced tomatoes, undrained
2 tbs tomato paste (optional -- and I did not use)
1 can white beans, drained and rinsed (I used cannelloni beans)
2 tsp dill
1/2 tsp paprika (I used 1 tsp and could have used more)
1 tsp thyme
2 cups vegetable stock (I used a boullion)
1/2 cup dry white wine
1 large bay leaf (totally forgot to use this)
1/2 tsp salt (skipped due to bouillion being salty)
1/4 tsp black pepper (could also have used a bit of cayenne. To be fair I add cayenne to everything).

Basically dump everything in the crockpot for 6 to 8 hours on low.


Now I am pretty full and tired.

[grins] Dude, if you're eating vegan in Lex, I can make some recommendations. :D The Amy's Kitchen cheese-free roasted artichoke pizza is FANTASTIC, and completely vegan. The crust alone is awesome, it's made with olive oil or something I think. Bocaburger's Spicy Chick'n patties are terrific, they grill well but also microwave up really nice and actually can be cut up to use in other recipes.

I have a couple really fast/easy recipes for vegan stuff--one of my favorites is kidney beans and apples, sauteed in olive oil with sherry and rosemary--takes about ten minutes with canned beans, plus five to cut up the apples. Another is tomato bake, which is nice big chunks of stale loaf bread--I use Meijer's black bean salsa bread--with about an equal amount cut up fresh tomato, all mixed up with olive oil and salt and pepper and whatever spices you like, and then baked for 20-30 minutes. Both these keep incredibly well, so you can make a large amount and have decent leftovers for days.

This recipe you posted sounds fantastic, I'll have to try it! :)

Oh, the kidney beans and apples looks great -- I might try it with black beans. For some reason I love black beans so much.

I'll try the bread bake as well (once fresh tomatoes look good and don't cost a mortgage), but I won't shop at Meijers -- their pharmacy won't sell Plan B.

Between Whole Foods and the Co-op and the new SuperKrogers' health food section, I can find just about everything I want - the trick in Lexington is finding a place I can go OUT to eat and not feel like everyone else is having a better time. Alfalfa's is the natural bet, but I've never actually *liked* Alfalfa's before.

Yeah, Alfalfa's is nice--trust me, it'll become the most amazing thing when you can say to a server "I'm vegan" and they actually know what that means and guide you away from menu items. I liked Alfalfa's a lot more afterards, just because of that, menu notwithstanding.

Otherwise, Oasis, near Euclid, that's a good place to eat. They've got a lot of vegetarian options, and very little secret egg or dairy lurking. The Japanese resturaunt on Richmond Rd, the one down past Man'O'War, that I can't remember the name of, that has a decent menu of tofu and vegan options, even some vegan sushi. For more casual eating out, pretty much half the Taco Bell menu is vegan (my favorite is getting a beef-and-potato burrito, minus the beef, with beans and fresco salsa mix. They were always super accommodating to me, and it never seemed like a hassle to do special orders like that.) Also, the Campus Cafe, at the corner of Euclid and...Rose? I think? They've got a falafel sandwich that's just amazing (and really good fries to go with it). Last I checked, their hummous and tahini was all homemade with no dairy in it. I once wanted to go to Natasha's and their online menu looked pretty safe, but I never actually got around to it.

Most places have a veggie burger, but I discovered the patty's almost always a Gardenburger which is made with egg and/or dairy, which is a bummer.

I haven't commented yet, but I've been reading your vegan posts and it's kind of fascinating. I'm not vegan, and don't think I could ever be, because I love cheese and yogurt waaaaaay too much, but I really admire people who are able to do the vegan lifestyle. So, way to go you!

I love cheese. I have cheese dreams. I eat yogurt daily. I have been known to order food at restaurants solely for the cheese. I have this thing for nachos...

This is kinda WHY I'm trying this. I have a ton of food issues and a really impressive history of disordered eating and the cheese? It might be killing me. So, now I try to think of it as curdled bovine secretions and focus on the mold.
